Soft Kefir Chocolate Chip Cookies

Soft, chewy chocolate chip cookies made with milk kefir, a touch of maple syrup, and added protein for a more balanced treat. Lower in sugar and gut-friendly, but just as rich and delicious as the classic.

Ingredients
  

  • 8 tbsp Butter melted
  • 1 egg
  • 1/4 tsp monk fruit extract
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp milk kefir or whole milk
  • 1 1/4 cup all purpose flour
  • 2 tbsp whey protein powder unflavored
  • 2 tbsp inulin powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup chocolate chips dark

Instructions
 

  • Preheat oven to 350℉ and line a baking sheet with parchment.
  • Add melted butter, monk fruit, and maple syrup to a mixing bowl. Whisk until smooth.
  • Stir in the egg, vanilla extract, and milk kefir.
  • In a separate bowl, whisk together the flour, protein powder, inulin, baking soda, and salt.
  • Add the dry ingredients to the wet ingredients a little at a time.
  • Fold in the chocolate chips
  • Spoon out two tbsp of the cookie dough and roll into a ball. You should be able to make about 8 big cookies, or several smaller ones. Flatten the tops slightly.
  • Bake for 8-10 minutes.
